Trail Mix Cookies
(Gluten-Free, Dairy-Free)

These delicious cookies are super easy & quick to make. This not-too-sweet recipe has been inspired by my long-time friend, Maya, who is always sharing her healthy baked goods with me every time we get together. Enjoy them every day at exactly cookie o’clock!
Yield: 12-16
INGREDIENTS:
2 eggs
4 tbsps coconut sugar
6 tbsps pure maple syrup or unsweetened date syrup
1 tsp pure vanilla extract
½ cup almond flour
1 1/2 cups GF oats
1 tsp baking soda + pinch of sea salt
2 tbsps unsweetened shredded coconut
2 tbsps raisins/dried cranberries
½ cup (equal mix of poppy seeds, raw pumpkin seeds, flax seeds & sesame seeds)
DIRECTIONS:
- Preheat oven to 350F.
- Combine all ingredients in a large round glass bowl. Mix well.
- Place moulded cookies on a parchment-lined cookie sheet.
- Bake for 20-25 minutes.
- Place baked cookies on a wire rack and allow them to cool completely.
- May store in the freezer.
