Cameron’s Holiday Ginger Bread Cookies

Ingredients
- 2¾ cups all-purpose flour, plus extra for dusting
- 1 tablespoon ground ginger
- 1 teaspoon baking soda
- 1 stick salted butter, softened, plus extra for greasing
- ¾ cup firmly packed light brown sugar
- 1 egg, beaten
- ¼ cup honey
- Preheat the oven to 350°F. Grease three baking sheets.
- Sift together the flour, ginger, and baking soda into a bowl. Add the butter and rub into the flour until the mixture resembles fine bread crumbs, then stir in the brown sugar.
- In another bowl, beat together the egg and honey with a fork. Pour this mixture into the flour mixture and mix to make a smooth dough, kneading lightly with your hands.
- Roll the dough out on a lightly floured surface to about ¼ inch thick and cut into shapes, using a star-shape cutter. Transfer the cookies to the prepared baking sheets.
- Bake in the preheated oven for 10 minutes, or until golden brown.
** if dough isn’t forming add more honey and water as needed to form dough
