Cameron’s Holiday Ginger Bread Cookies

Ingredients

  • 2¾ cups all-purpose flour, plus extra for dusting
  • 1 tablespoon ground ginger
  • 1 teaspoon baking soda
  • 1 stick salted butter, softened, plus extra for greasing
  • ¾ cup firmly packed light brown sugar
  • 1 egg, beaten
  • ¼ cup honey

 

  1. Preheat the oven to 350°F. Grease three baking sheets.
  2. Sift together the flour, ginger, and baking soda into a bowl. Add the butter and rub into the flour until the mixture resembles fine bread crumbs, then stir in the brown sugar.
  3. In another bowl, beat together the egg and honey with a fork. Pour this mixture into the flour mixture and mix to make a smooth dough, kneading lightly with your hands.
  4. Roll the dough out on a lightly floured surface to about ¼ inch thick and cut into shapes, using a star-shape cutter. Transfer the cookies to the prepared baking sheets.
  5. Bake in the preheated oven for 10 minutes, or until golden brown.

** if dough isn’t forming add more honey and water as needed to form dough
