Mixed Baby Green Salad with Tahini Vinigarette


3-4 cups seasonal mixed baby greens

1 cup of your favorite sprouts

½ cup grated carrots

½ cup shredded red cabbage

1 cup cucumber slices

1 tsp. raw sesame seeds


¼ cup raw tahini

2 tbsp. apple cider vinegar

1 tbsp. green onion, finely chopped

½ tbsp. fresh ginger, peeled and finely minced

1 clove garlic, finely minced

Dash of cumin

Dash of sea salt

½ cup water


  1. Toss together all salad ingredients in a large bowl and set aside.
  2. Place all the dressing ingredients, except water, in a blender. Blend adding only enough water to achieve desired consistency. Add more cumin or salt to taste.

Pour only enough dressing over salad to coat and toss. Top with more sesame seeds and serve.
