Golden Beet Salad with Cider Vinegar Dressing

INGREDIENTS:

5 golden beets

1 tbsp. extra virgin olive oil

¾ cup apple cider vinegar

Sea salt to taste

3 cups spring mix or other tender greens

1 tbsp. walnut or avocado oil

Freshly ground pepper

½ cup toasted walnut pieces

½ cup ricotta (hard) or fresh goat cheese

DIRECTIONS:

  1. Grate the beets and mix with the rest of the ingredients in a big salad bowl.

You can also bake the beets if you want a smoother texture (takes about 1 hour).
