Gluten-Free Pear Apple Cranberry Crisp
INGREDIENTS
For the filling:
2 Pears peeled and diced (about 2 cups)
2 Apples peeled and diced (about 2 cups)
2 cups fresh Cranberries
1/4 cup Maple Syrup
2 Tbsp Lemon Juice
2 tsp Arrowroot or
1 Tbsp Cornstarch
1 tsp fresh Ginger
1/2 tsp Cinnamon
For the topping:
1 cup Whole Rolled Oats
1/2 cup Oat Flour (ground oats)
2/3 cup Walnuts (chopped)
1/4 cup Maple Syrup
1/2 tsp Salt
1/4 cup Coconut Oil (or Earth Balance or butter)
DIRECTIONS:
- Preheat oven to 350°
- In a bowl, combine PEARS, APPLES, and CRANBERRIES.
- In another bowl, whisk together MAPLE SYRUP, ARROWROOT, LEMON JUICE, GINGER, and CINNAMON;
- Add to fresh fruit; gently combine, and transfer to an 8×8 baking dish; set aside.
- In a separate bowl, combine OATS, OAT FLOUR, WALNUTS, BROWN SUGAR, SALT, and COCONUT OIL (or butter).
- Work this mixture together with a pastry cutter, or your hands, until it becomes crumbly; sprinkle it over prepared fruit evenly.
- Bake, uncovered, 30-40 minutes until bubbly and golden brown; allow to cool for 10 minutes; serve warm.
